<div style="font-size: 12pt; margin-bottom: 0.0001pt; line-height: normal;"><span class="font-size-2" style="font-size: 10pt; font-family: arial,helvetica,sans-serif;">For those of you that don't know, the story of 'Mama Lans' extends to more than just the supper club but back to a time just after the revolutionary period in China where my granddad and mum used to run a mobile food stall in the streets of Beijing. The store was so popular that it was not unusual to see people jumping off the bus just to queue up for an hour before the food sold out. Some loyal customers would even queue at the entrance of the market before it even opened just to buy the first freshly made dumplings and buns on offer.</span></div>

They are basically rolled buns layered with meat or vegetable stuffing. I haven't had them for years but while looking back at some old family albums the memories of the soft texture and fragrance of the rolls came rushing back. </span></div>

<p>Thankfully the weather last Saturday held up so we were able to serve my mum’s Beijing hand rolled noodles with cold aubergine and tomato topping. It seemed to go down a treat in the hot weather as did the watermelon and cucumber mocktail served on the night.</p>

<p>As you guys know, we always demonstrate how to make the main dish of the evening and invite our guests to have a go. As techniques go, rolling out dough may seem harmless enough but it was perhaps the most difficult…</p>
<p>Thankfully the weather last Saturday held up so we were able to serve my mum’s Beijing hand rolled noodles with cold aubergine and tomato topping. It seemed to go down a treat in the hot weather as did the watermelon and cucumber mocktail served on the night.</p>
<p> </p>
<p>As you guys know, we always demonstrate how to make the main dish of the evening and invite our guests to have a go. As techniques go, rolling out dough may seem harmless enough but it was perhaps the most difficult technique we have asked our guests to have a go at.</p>
<p> </p>
<p>In short the technique involves initially rolling out the noodle dough so that it’s just large enough to be wrapped around the rolling pin. The rolling pin wrapped in dough is then rolled over itself applying even pressure across the whole pin. The result is that the dough gradually grows wider and thinner with more and layers wrapping around the rolling pin – which you then remove, slice and unravel to reveal long even strips of noodles.</p>
<p> </p>
<p>Sounds simple enough but the trick is not to squash the layers wrapped around the rolling pin or else you’ll just get short stubby and not very nice, doughy noodles!</p>
<p> </p>
<p>Unfortunately our guests couldn’t quite get a handle of the technique this time around – with one Italian guest exclaiming “this is why we invented pasta machines!” (though I think this is an old Italian technique as well!)</p>
<p> </p>
<p>I've never laughed so much doing a demo!</p>
<p> </p>
<p>The last word has to go the dessert though. What was sold to me by the boyfriend as a plain Jane chocolate tart turned out to be (... take a deep breath ...) the croustillant au chocolat or the Louis XV chocolate dessert made famous by Alan Ducasse and then by his disciple, Alexis Gauthier.</p>
<p> </p>
<p>The dessert consisted of three layers – a hazelnut meringue base, salted caramel with oat praline (added by the boyfriend) and a light chocolate mousse which was all covered in a deep chocolate sauce!</p>
<p> </p>
<p>We couldn’t find any gold leaf though despite making trips to 2 different Waitrose stores so the boyfriend topped the ‘tart’ with more crunchy praline. Yes...I know it’s not traditional Beijing but the rice flavoured ice cream had no chance!</p>

<p>Wow, what a week it has been!<br></br><br></br>After keeping the Mama Lan supper club away from my work colleagues, I finally let them in on the secret that I have been moonlighting as a cook during my weekends for the past year.<br></br><br></br>The news spread like wildfire around the office and so I decided to tell my boss before he heard it on the grapevine. <br></br><br></br>Now, given that I worked in a very professional Private Equity house – I was worried that my boss would think I was being distracted from…</p>
<p>Wow, what a week it has been!<br/><br/>After keeping the Mama Lan supper club away from my work colleagues, I finally let them in on the secret that I have been moonlighting as a cook during my weekends for the past year.<br/><br/>The news spread like wildfire around the office and so I decided to tell my boss before he heard it on the grapevine. <br/><br/>Now, given that I worked in a very professional Private Equity house – I was worried that my boss would think I was being distracted from the job that actually paid my bills. So you can imagine my surprise when he said “that’s fantastic! How marvellous! I’ve got a meeting with a old friend for lunch tomorrow – could you cater for us, we would have just some sandwiches from downstairs otherwise?”<br/><br/>“...err, what about work? Not sure I can rustle something with only a day’s notice ” I replied – not quite sure of what to say...<br/><br/>“Tell your line manager you’ll be late that way you can cook in the morning. Also, I want him to try to convert him to my ways of eating vegan food. Will that be a problem?”<br/><br/>Luckily for us it’s not too much of a problem cooking vegan friend food as not much diary is used in Chinese cooking other than eggs. <br/><br/>In the end, I reluctantly accepted – though I declined the offer to come it late – not sure that would have gone down too well with my manager. <br/><br/>My encounter didn’t end there however. On my way out the boss shouted “ Oh can you tell Ms B* (my boss’ secretary) that she won’t be needing to order lunch for me and Lord ....”<br/><br/><strong><span style="color: #ff0000;">A LORD!</span></strong> <br/><br/>As it turns out, the guy I was to cook for was formerly a highly distinguished banker and is now an advisor to the Government!</p>
<p><br/>Three things struck me at this point: <br/><br/>1) I was about to cook for two of the most powerful men in the UK let alone the City. <em>This made me very nervous.</em><br/><br/>2) That two men with a combined net worth that would make the guys on Dragon Den look like they needed spare change would have quite happily tucked into supermarket sandwiches for lunch! <em>This made me feel much better.</em><br/><br/>3) I needed to go shopping – I had used all the plain flour to make last night’s dinner! <em>I couldn't serve them left overs could I?</em></p>

<p>2) Cream of tar tar helps</p>

<p>3) Get a decent baking tray - though I think he was trying to justify why the duck he bought a £30 quid 'non warp' baking tray!!!</p>

<p>4) Make the effort to whizz up the almonds and icing sugar in a food processor even if you are using ground almonds. The sugar helps to mop up any mositure on the surface of almonds if they have been sweating in the bag.</p>
<p></p>
<p>5) Stretching and doing leg presses in the gym - he strained a hamstring when crouching down watching the oven!</p>

Had lots of request about our dumpling night! We decided to run it again for our next event on the 20th.<br/><br/>It was great fun showing people how to make traditional dumplings from scratch (just hope there will be volunteers this time too). Come on let's have some fun!!!<br/>
