Well I can’t quite believe it Locavores, we are coming up to 2 years since I hosted my first ever pop-up restaurant evening back in October 2009! 2 years! I had no idea I would go this far and am so very grateful to everyone who has supported me thus far! Not only has it been great fun, it has also been massive, and much needed learning curve for me as a chef. I’ve learnt so many things that I have given me the confidence I needed in the kitchen and met some really wonderful people along the way. Throughout this time I’ve fed nearly 500 mouths, between 90 and 100 different courses, over the course of 31 pop-up events. There has been a lot of variety in the themes of the evenings but have always (and will always) maintained my commitment to using as much seasonal and British produce as I can get my hands on! I still have lots more ideas for pop-up's up my sleeve to entice and excite you, however, I shall be doing the nights tri-monthly from the start of 2012 to give me a chance to work on other projects.
For the Pop-Up's birthday dinner, I’ve decided that it would be a real treat to put my feet up during service and actually be able to enjoy dinner with you, my beloved diners. I shall be leaving my kitchen in the capable hands of a dear young friend of mine who is a very promising Chef. His name is Ben Bridgeman.
Ben has had a passion for cooking from an early age from watching his mother in the kitchen. As soon as he was tall enough see over the kitchen counter, he started copying what she was doing and was soon whipping up dishes that his mother taught him. This July, Ben completed his year-long Leith's Diploma and Leith’s School of Food and Wine. Throughout his course, in his spare time, Ben worked in Tom's Kitchen, the restaurant of Chef Tom Aiken's. Here,in this Chelsea based kitchen, he has expertly honed his culinary skills.
We have decided to go with a black and white theme, all food served will be black and white, and to keep with the theme, I would ask that you all wear black and white too! Cocktail dresses and tuxes would be wonderful to see but I do appreciate it is a Thursday!
The menu will be something along the lines of the following:
• Squid ink bread with horseradish crème fraiche and caviar
• Black Arancini
• Seared scallops. Black pudding. Caramelised apple slices.
• To be decided
• Panacotta with brandied home grown blackberries
• Cornish Yarg
• Cerney Ash
• Charcoal and Bath Oliver Biscuits
As ever, it’s BYOB and we are always to happy to cater for sensitive dietary requirements – just let me know asap and we will rustle up something delicious!
