Event Description

The Loft Project gallery for chefs is pleased to present our next chef in residence, Ollie Dabbous. Ollie joins us for three nights only from the 1st until the 3rd of July.

Ollie's cooking style is one of restraint, purity of flavour and ultimately simplicity, he firmly believes the best dishes are those that impress without appearing to try. Sourcing and seasonality are paramount given this minimalist approach.

Ollie has worked alongside some very talented chefs, Le Manoir aux Quat' Saisons, Hibiscus and Mugaritz, and was most recently head chef at Texture restaurant on Portman Square to mention a few. He has also staged at L'Astrance, Pierre Gagnaire, Noma and WD-50.

Ollie is currently raising finance to set up his own restaurant in London.

Menu:

Home made soudrough bread with toasted grains
Fresh peas, shoots and flowers with peppermint
Mixed alliums
Radishes in a chilled shrimp broth
Pickled mackerel, gooseberries and elderflower
Confit salmon with perilla
Grilled lamb shoulder with sea vegetables
Wigmore cheese, ripe fig, toasted rye
Chilled lemon verbena infusion, cucumber and borage
Fresh milk curds with rosewater
Chocolate truffles with fennel pollen

Ollie is a very talented chef, I am excited to see his dishes come to life. He spent some time and mine and Nuno's favourite restaurant in San Sebastian, Mugaritz.

Mixed alliums sounds intriguing. As does lemon verbena infusion...fennel pollen...wow
