I found this recipe in the Good Food Magazine last year, and it has just been found within my hundreds of recipes...I feel inspired to make this again this week...it is so light and tasty!.... You should all make one!...Perhaps even make your own Lemon Curd, should you wish to do so!....

 

175g butter
100ml Greek Yoghurt
2 tbsp lemon curd
3 eggs
zest one lemon
200g self raising flour
175g golden caster sugar
85g blueberries

If you want icing 140g icing sugar and juice of lemon

Put strip of greaseproof in bottom and up sides of loaf tin

Whack it all in a bowl (save for blueberries) and whisk/mix

Put 1/2 in loaf tin and add half blueberries, add rest of mix then rest of blueberries,

Bake for 1hr 15 at 160c (140c fan) or until skewer comes out clean

(mine took nearer 1.5 hours)
