Asian spiced Duck with Tamarind Sauce
The duck is marinated overnight in shallots, spring onions and aromatic spices then steamed to break down all the fats and finally grilled for a crispy finish. The tangy sweetness of the tamarind is a great accompaniment to the duck.
Dessert
Tarte Tartin with Crème Normande
Soft caramelised pink lady apples on a bed of crisp pastry served with a Calvados crème fraiche, devilishly divine!
