The provisional 6 course menu is as follows.
Pig and Pea Salad with crackling,
seared scallop, pea shoots and watercress.
Cerviché of wild trout,
with cucumber granita and fennel.
Roast wood pidgeon,
smoked butter pomme purée,
puy lentils and spring greens.
Pre Dessert Course:
Assiette of Yorkshire Rhubarb
including rhubarb posset,
sherbet and sorbet.
