I really enjoyed our supper club last Saturday evening.  I was wavering quite a bit about this supper club because it was the Jubilee week-end and I wasn't sure that people would be able to make it.  But, I am so glad that I decided to go ahead with it.  A group of friends booked to come along and it really was an enjoyable evening.  My husband and I managed to spend more time with our guests and we really had a laugh with them.  No one would have guessed that these people were strangers in our home.


I did slip up a little this time as I forgot to fry the plantains!  How could I forget that?  It wasn't as if I didn't have a plan to follow - I did, I just didn't look at it very often.  I put it down to the fact that I wasn't at my best as I was trying to cope with a darned summer cold!  Guess who were having fried plantains the next morning for breakfast?

I have seen a recipe for plantain fritters as the one you've described. It did sound pretty awful. In fact the feedback from those who had tried it was negative, so it's good that you ddn't serve them. -:) Once you've boiled, steamed or bake plantains the best thing to do is either eat them like that or you can try a mash with Caribbean sweet potatoes. Now that is tasty!

Thanks Paulette. I wonder if in fact the ones I had were banana/green chilli fritters? When I did a Caribbean supper club I did plaintain fritters and they were so bland I didn't serve them. Right lot of work they were too, what with the boiling and mashing.

Kirsten, Sorry I don't have one. I've never made plantain fritters before but I love making banana ones. However, I have done some research on the web and I've seen various recipes for plantain fritters. I lke to keep things simple and this link is very similar to how I would go about making plantain fritters if were to have a go at doing them. Paulette, I once had a dish which I can't find the recipe for:

fried plaintain fritters with green chillies....do you have a recipe?
