Just finished making a batch of lime curd for next week's Scratch Secret Supper. Hope I can hold off eating the vat of it til then. Early production might have been a mistake. Hmmm.
Anyway this is a great recipe so I thought I'd share...
4-6 limes, zest and juice
200g caster sugar
100g butter, cut into cubes
3 eggs, plus egg yolk
- Pop lemon zest and juice, sugar and butter in bowl over a pan of gently simmering water. Stir to melt.
- Whisk eggs and yolk and stir them into the lemon mixture until all are well combined,
- Cook for 10-15 minutes until the mixture is creamy and will coat the back of a spoon.
- Set aside to cool. Once cooled, spoon the curd into sterilised jars and seal.
