The lovely Esther of SL6 came to our Supper Club last Saturday and gifted us some gorgeous plums. Not sure how best to use them, Esther suggested macerating in armagnac. So that's what we did...
Plums in Armagnac
1 Sterilised Jar
Plums
Sugar
Armagnac (or brandy)
Pour about a 5 cm layer of sugar in the bottom of the jar. Cut the plums in half. Stuff them into the jar. Don't be too ginger, they should snuggle closely. Top with half a cup of sugar. Pour brandy to cover. Shake. Shake again. Tip upside down each day for a week, then let it sit and do it's stuff. Ready in a month. Keeps forever.
