Rock Shrimp tempura with a homemade spicy mayonnaise sauce
This simply is one of the best dishes I’ve ever eaten. I remember the days I’d go to Zuma and sit at the counter just to have this dish only to turn up one day and find it had disappeared from the menu! You should have seen the disappointment on my face!
Honey baked goat’s cheese with walnuts, pear and a chicory salad
I’ll serve the above with a homemade buttermilk bread
The goat’s cheese is baked in the oven with a sprinkling of walnuts until bubbling and warm. It’s then served with thinly sliced pears and chicory with a Dijon mustard, tarragon vinegar and lemon juice dressing. Did that get your tongue going?! J
One of the most famous Indonesian dishes, I’m actually told it is their national dish so I’d better do it justice! I will be doing a beef variation with a chicken or vegetarian option also available. What attracts me about this dish is the seemingly hodgepodge of spices and even ingredients that go into it but the result is absolutely outstanding! It really breaks all the rules in modern cooking as it mixes fish, meat and poultry but the resulting effect is outstanding!
Chocolate and toffee fondant served with vanilla ice cream
Dip your spoon into the crunchy dark chocolate exterior to reveal a liquid centre filled with melting toffee! Hmmmmmmm, isn’t life beautiful!??
