Mama Lan Makes Spring Panacakes - 2 Spaces left.

Hi all,

It’s been hectic at the day job lately, but luckily I have this weekend’s dinner to look forward to!

It was great fun preparing and researching this week’s menu. The star of the dinner this week will be hand rolled Spring Pancakes. Eaten to celebrate the coming of Spring, these little pancakes will be served with variety of meat and vegan friendly dishes.


Mocktail

Starters

Seaweed Salad (v)

Fried vegetarian cake wrapped in crispy Tofu skin (v)


Mains

Spring Pancakes (v) served with:

· Chicken with chilli oil dressing

· Cumin spiced lamb

· Three treasure stew (carrot, potato and yellow beans) (v)

· Bean sprout salad (v)


Dessert

Wan bean cake – served with homemade honeycomb and summer fruits jelly* (v)


(v) vegan friendly

*fingers crossed for the jelly– it will be the first time we’re setting jelly using agar agar (which is made from seaweed) rather than gelatine.


Can’t wait to dump the suit and put on the apron!

Hi Nomad - not been around much so apologies for the belated reply!
The agar agar was surprisingly easily to use - the only form I could find were the long strands of seaweed. I found the opposite problem to the one you noted - i followed the measurements on the packet but found the first batch set a bit to firmly. Its a shame that agar agar has such a high melting point - somehow you just don't get that melt in the mouth texture - granted its pretty close though. Since it doesn't melt I might even try serving it with a warm sauce next time!
