At long last, the BF finally succeed in making some half decent macaroons! Its taking 10 attempts and at least 1.5 kilos of almonds but at last something to show for it all!
Some tips I've learned from the BF himself - whether I wanted to or not!
1) Apparently, you don't need aged egg whites despite what all the recipes say. Gently stirring the egg whites over simmering water for 30 secs does the same trick.
2) Cream of tar tar helps
3) Get a decent baking tray - though I think he was trying to justify why the duck he bought a £30 quid 'non warp' baking tray!!!
4) Make the effort to whizz up the almonds and icing sugar in a food processor even if you are using ground almonds. The sugar helps to mop up any mositure on the surface of almonds if they have been sweating in the bag.
5) Stretching and doing leg presses in the gym - he strained a hamstring when crouching down watching the oven!
